Tilapia – An Under-Appreciated Fish!

Almond-Crusted Tilapia Recipe (Adapted from Michelle Woolf, allrecipes®)

(Time: Approximately 30 minutes; Serves: 8)

Ingredients
2 Eggs
1/3 Cup Water
1 Tbs. Lemon Pepper
1 Tbs. Garlic Powder
1 Tsp. Ground Pepper
2 Cups Ground Almonds
3 Cups Freshly Grated Parmesan Cheese
½ Cup All-Purpose Flour
1/2 stick butter, melted (or ¼ Cup Canola Oil)


Directions
Beat the eggs with the lemon pepper, garlic powder, and ground pepper until blended and set aside.

Mix the ground almonds with one cup of the Parmesan cheese on a separate plate and set aside.

Place the flour in a plastic bag, drop the tilapia fillets into the bag, toss to coat, and shake off the excess (or you can just place the filets on a plate and sprinkle flour on each side to coat).

Dip the tilapia in the egg mixture and then press into the almond mixture.

Melt the butter (or pour the canola oil) in a large skillet and raise heat to medium-high.

Put the tilapia into the skillet and cook until golden brown (about 2-3 minutes per side).

Reduce heat to medium and sprinkle the tilapia with the remaining cup of Parmesan cheese.

Cover and cook until the Parmesan cheese is melted (about 5 minutes).

Transfer to a serving dish and garnish with parsley sprigs and lemon wedges.
